The Milton Hotel is looking for an enthusiastic Apprentice Chef to join our growing kitchen team.

This is an exciting opportunity to learn under a passionate team focused on quality produce, seasonal cooking, open fire cooking, fermentation and modern pub food done properly. We're a family-owned venue and brewery on the NSW South Coast, known for award-winning Dangerous Ales beers, great food, and creating a genuine hospitality experience for locals and visitors alike.

As a recognised 1 Hat restaurant, this is a rare opportunity for an apprentice chef to learn in a fast-paced, quality-driven kitchen while being mentored by an experienced hospitality team.

Whether you're just starting your hospitality journey or looking to begin a formal apprenticeship, we want someone with a positive attitude, strong work ethic and genuine passion for food.

- Assisting chefs with food preparation and service
- Learning a variety of cooking techniques across prep, grill, fryer and pass
- Maintaining cleanliness and organisation of kitchen stations
- Following food safety and hygiene standards
- Assisting with stock rotation and kitchen procedures
- Working in a fast-paced team environment during busy services
- Learning about seasonal produce, menu development and modern hospitality operations

- Passion for food and hospitality
- Positive attitude and willingness to learn
- Ability to work in a fast-paced environment
- Reliable, punctual and hardworking
- Strong communication and teamwork skills
- Ability to take direction and follow procedures
- Availability to work nights, weekends and public holidays
- Previous kitchen experience is beneficial but not essential
- Minimum age of 15 years to meet apprenticeship eligibility requirements
- Australian citizenship required for this position
- Completion of Year 10 or equivalent education qualification required
