𝗕𝗮𝗻𝗻𝗶𝘀𝘁𝗲𝗿𝘀 𝗠𝗼𝗹𝗹𝘆𝗺𝗼𝗼𝗸 have an exciting new opportunity for a Chef de Partie (Pastry) to join our passionate team at Rick Stein Restaurant in coastal Mollymook, NSW. As a member of our wider Salter Brothers Hospitality team, you’ll play a key role in creating meaningful experiences for both our guests and teammates through thoughtful service, attention to detail, and a commitment to continuous improvement.

Set across two beautiful locations only minutes apart, Bannisters Pavilion and By The Sea bring coastal sophistication and relaxation to secluded Mollymook. By The Sea is home to Rick Stein, a celebrated seafood destination, renowned for its fresh, locally sourced produce and simple, elegant dishes inspired by famous chef Rick Stein’s signature style.

Nestled on oceanfront cliffs, the restaurant offers a relaxed yet refined dining experience, showcasing the natural beauty of the South Coast and the incredible seafood sourced from the area.

𝗧𝗵𝗲 𝗿𝗼𝗹𝗲 𝗮𝗻𝗱 𝗸𝗲𝘆 𝗱𝘂𝘁𝗶𝗲𝘀

- Curating an unforgettable and personalised experience for our guests from start to finish;
- Deliver all pastry experiences for the property including: restaurant dining; functions, weddings, events and experiential dining opportunities;
- Oversee the Pastry section of the kitchen during service;
- Prepare a variety of pastries, desserts, and baked goods according to established recipes and standards, ensuring all pastry items are prepared to the highest quality, maintaining consistency in taste and presentation;
- Work closely with the Sous Chef and Head Chef to develop new menu items and improve existing ones;
- Monitor stock levels of pastry ingredients and supplies, placing orders as needed to maintain inventory, manage the cost of pastry production by minimizing waste and optimizing the use of ingredients;
- Lead by example to ensure the overall guest experience exceeds expectations;
- Work closely with other Chefs to ensure the overall success of your team and the retreat.

𝗘𝘀𝘀𝗲𝗻𝘁𝗶𝗮𝗹 𝗰𝗿𝗶𝘁𝗲𝗿𝗶𝗮 𝗿𝗲𝗾𝘂𝗶𝗿𝗲𝗱 𝘁𝗼 𝗯𝗲 𝗰𝗼𝗻𝘀𝗶𝗱𝗲𝗿𝗲𝗱

- Chef trade qualification (essential) with a focus on Pastry (preferred);
- Previous experience as a Chef De Partie (Pastry) in a high end, fine dining or hatted environment (essential);
- Contribute to a positive and motivated kitchen atmosphere, and have a genuine passion for people, food and wine;
- Maintain a clean and organised kitchen, adhering to food safety and hygiene standards;
- Ability and willingness to commence work on a rotating roster including weekends and public holidays;
- Reliable vehicle to get to and from the hotel;
- Be located close to our hotel or be willing to relocate.
