Mollymook Golf Club is located 3 hours south of Sydney and 2.5 hours east of Canberra on the beautiful south coast of NSW. The club is quite unique with two separate clubhouses and courses located 2 kilometres apart in Mollymook. Our newly designed and renovated club offers a vibrant atmosphere with multiple food venues, multiple bars, gaming facilities, and hosts various events. We pride ourselves on delivering a high-quality dining experience to our members and guests and are now seeking an experienced and dedicated Senior Chef De Partie to join our dynamic team.

Position Overview:

As a Senior Chef De Partie, you will play a crucial role in overseeing the daily operations of our kitchen, ensuring the delivery of exceptional food quality and service. You will support the Head Chef in managing kitchen operations, lead and motivate a team of kitchen staff, maintain high standards of cleanliness and organisation, and collaborate on creating and implementing menus that delight our patrons.

Key Responsibilities:

Supervise and coordinate kitchen staff activities, ensuring efficient workflow and high standards of food preparation.
Assist in menu planning and development in collaboration with the Head Chef.
Support the Head Chef in managing kitchen operations, including staff rostering and training.
Ensure compliance with food safety and hygiene regulations, including allergen management.
Monitor inventory levels and assist with ordering and stock control.
Train, mentor, and develop kitchen staff to enhance their skills and performance.
Maintain a clean and organised kitchen environment, adhering to health and safety standards.
Manage kitchen operations during busy service periods, ensuring timely and quality food delivery.
Requirements:

Proven experience as a Senior Chef De Partie or similar role in a high-volume kitchen environment.
Strong leadership and team management skills.
Excellent knowledge of kitchen operations, including food safety and hygiene practices.
Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
Exceptional organisational and time-management skills.
Strong communication and interpersonal skills.
Certificate III in Commercial Cookery or equivalent qualification.
